Saying we are obsessed with Skillet Queso in our house, would be an understatement. It is one of the only things that every single person in our family loves. Normally I am fighting one of the kids to eat or my husband is eating something that he doesn’t love, but not with this. It is delicious and full of flavor. We were seriously eating at Chili’s once a week before we discovered the amazing combination of cheese and No Bean Chili to make thisCopycat Chili’s Skillet Queso.I didn’t even know No Bean Chili existed until a couple of years ago and now I always keep it on hand to satisfy our queso cravings.

Copycat Chili’s Skillet Queso

This recipe can be whipped up in just a few minutes and it is full of delicious flavors. It is our go-to party food and it seems we can hardly watch a sports event without it.

Copycat Chili’s Skillet Queso

You will need:

  • 16 ounces of Velveeta 2% Milk (This is about half a box)
  • 1 Can No Bean Chili
  • Cast Iron Skillet
  • 1 Cup Milk
  • 2 teaspoons paprika
  • 1/2 teaspoon cayenne
  • 3 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1 tablespoon lime juice

Cut up the cheese into small sections. Add the cheese and milk into a saucepan or skillet over medium heat. Stir frequently until the cheese starts to melt. Add the spice and lime juice and stir well and then add the chili, stirring until everything is well combined and melted. I like to use the 2% Velveeta instead of the original because not only does the cheese melt better but it also has less fat than the original version.

Serve immediately with chips. We also love to serve it with a cup of salsa so everyone can switch up their flavors a little bit.

    I haven’t made this recipe with the seasonings yet because I was in a hurry and just used all of this recipe except the seasoning instead using a half a packet of taco seasoning and it came out great. One day I will take the time to actually use the spices.

    I’ve made something similar to this..but no milk.
    Brick of cream cheese 1 can no bean chili and Fritos jalapeno cheddar in a small can..its awesome! Just melt all together on the stove. Sometimes I will add. the same size can if fritos refried beans..the fritos products are always in the chip section. Super easy!

    Sounds good, though I’d brown hamburger on the side, drain and add, and I’d cook it on high heat in a crock pot. Kind of like another velveeta recipe, again in crock pot, with half brick of velveeta and 1 can Rotel Diced Tomatoes … again with hamburger. It’s all good!
