This gorgeously spiced French cinnamon toast recipe is served with warm cinnamon apples, lemon mascarpone and honey.

Not only is it quick to prepare, it's absolutely delicious, and perhaps best of all, it works with a huge variety of accompaniments! From the delicious griddled apple slices with lemon mascarpone I have for you today, to berries and powdered sugar or served with warm peaches, French toast is the perfect vehicle for all sorts of deliciousness!

Here's my French cinnamon toast recipe, rich with caramelised apples, citrus mascarpone and honey.

Ingredients

For the lemon mascarpone

  • 150 g (5.29 oz) mascarpone
  • 1 unwaxed lemons zest and juice
  • 1 tbsp honey

For the toast

  • 2 medium free range eggs
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1 tbsp honey
  • 4 slices wholemeal bread medium thickness

For the apples

  • 2 green apples cored and cut into thin slices
  • 2 tsp cinnamon
  • 1 tbsp honey
  • 25 g (0.88 oz) walnuts roughly chopped

For the lemon mascarpone, put the mascarpone, lemon zest, and honey in a bowl. (You can add the juice too for an extra citrus hit, if you wish)

Stir gently to combine. Pop in the fridge.

For the French toast, preheat the oven to 160C/320F (140C/285F fan). In a bowl, combine the eggs, cinnamon, mixed spice and honey.

Dip each piece into the egg mixture, shake off the excess – you should have just enough batter for all four slices.

Warm the pan over a medium heat.

Griddle for 30 seconds.

Flip and fry for 30 more seconds until just cooked.Pop on a plate or baking tray and into the oven to keep warm.

For the griddled apple slices, pop the apple slices into a bowl, add the cinnamon and honey.

Toss until well coated.

Lay the slices onto the grill pan, fry for 60 seconds.

Flip and cook for a further 30 seconds.

To plate up, serve two triangles of French toast to each plate, top with apple slices and a generous dollop of the lemon mascarpone, scatter with walnuts and serve.

For the lemon mascarpone

  • Scatter with walnuts and serve.

    I'm not kidding, when I saw even the first picture my mouth was literally watering looking at it.. Then I watched the video and I love how it's all griddled/healthy fried.

    I'm not a big chef or cook as never have much time but have ben moving to a healthier life these past few months, in fact I opted to forego booze from nowe till christmas, so wish me luck.. Anyway, Im going to go get the ingredients tomorrow and give this a go!

    A nice fruit juice would go down a treat to finish it off!
