What is EVOO salad dressing?

I made this with my usual dressing proportions, about a third of the amount the recipe calls for. It was plenty. I also skipped the added sugar entirely. Very tasty recipe and a nice light dinner for a hot day with a filet of smoked trout on top.

I simplified this by using Lucina Italia Balsamic and EVOO salad dressing, which I massaged into the lacinato. I also roughly chopped the peas. The words "best kale salad ever" were spoken!

Who needs added sugar? Do the apricots really need to be in sweetened water?

Sorry for ruminating before making the recipe, but this looks great and is inspiring me to riff, perhaps subbing in the fresh peaches that are astonishingly good right now for the dried apricots, and going with a lemon juice and maple syrup/dijon dressing with EVOO, which I'm thinking will be equally good, if different. Thanks, Mark, as always, for your recipes!!

This was incredible! However, I certainly did NOT put in 1/4 cup sugar. That is crazy talk! I just added a bit of honey to taste. I also only used 1/2 cp of oil.

A good salad but needed some tweaking. It was clear there'd be plenty of dressing left over, so I made half and still have enough for another salad. Used only 1T sugar in the dressing, and next time will use less ginger; its flavor and kick keep developing as the dressing sits. Poured boiling water over the peas to soften them a bit, then doused them in ice water to stop the process and cut each in half. Used fresh apricots because they're in season.

I used way less ginger.
Add fresh apricots instead of dried.
Roasted pecans for the nut component.
And my secret weapon, pan fried shish*to peppers!!

This was delicious!!! After reading the other comments I decided to half the dressing recipe— which was more than enough. I also used a tbsp sugar for dressing and 2tbsp ginger instead since the amounts for both were so large. It was surprisingly fantastic!

I shouldn't have disregarded the previous notes about the amount of dressing. We like a light dressing application so I could have made about a quarter of the recipe. I didn't have apricots so I used dried cranberries that I soaked in water to plump them up. I also only used about a tsp. of sugar in the dressing.
This is a really delicious and easy salad.

Best salad ever. Eliminated sugar and used fresh peaches from our tree. The recipe made enough dressing to store an extra bottle in the fridge. Will make this again and again.

Or just make the full recipe of dressing and make this salad 4x within a couple weeks. Saves nicely in the fridge. You can then throw this salad together very quickly. Easy, delicious and beautiful.

Delicious, got rave reviews. Used only 1 scant Tb of honey, no sugar for plumping the apricots, doubled the veg/greens etc, and only used half of the dressing. Did use ALL the fresh ginger, yum. So, basically 1/4th of the dressing recipe is sufficient- but make it all bc it is really tasty.

I resent salad, but all the positive reviews are 100% true: it's a banger. I made my own little modifications, like cutting the oil, reducing sugar, and substituting fresh apricots for poached, dried ones. It seems like the kind of recipe that is great regardless of what produce you use, but if you do get really fresh, farmer's market snap peas and quality feta, they'll make all your salad dreams come true.

I made this without the kale and just doubled the peas. For the dressing I left out the garlic, and then just used what seemed like the right amount. I also doubled the mint and used the same amount of fresh basil.

Good salad, Sugary dressing

The salad itself is a great combination of savory, sweet, salty and crunch flavors and textures. The amount of dressing is WAY too much for the salad and far too sweet. Skip the step of sweetening the apricots and cut the sugar down in the dressing.

Love this salad. I did substitute honey for sugar in both steps that asked for sugar, and doubled the apricots and cut them in 1/2 so you were more likely yo get with each bite. I also substituted the kale with arugula. Delicious!

For the dressing - is it really 1/2 C of fresh ginger?

Made exactly to recipe except…I forgot to add the quarter cup sugar to dressing! It was a little intense, but would prob just add a bit of honey next time. And may just add some orange or clementine instead of apricots.

Excellent. I used fresh goat cheese as a sub for feta. The mint is essential as a finishing touch.

I am not one of those that complains about sugar quantities in every recipe but in my opinion, this salad has too much sugar. Used 1/8 cup sugar in dressing, skipped it in poached apricots (definitely not needed, dried apricots are naturally sweet). Subbed toasted walnuts for almonds as I had them on hand. I would try with fresh apricots when in season. There was too much dressing so I have some left over. Will use on another salad — it is delicious dressing. Overall, great and healthy salad.
